One of my favorite things about Autumn is PUMPKIN! I love pumpkin bread, pumpkin pudding, pumpkin lattes...you name it! I found this tutorial on Pinterest and just had to try it! Cheesy

I made a couple of small changes. I used spice cake mix rather than yellow just because I happen to love it. I also added in some chopped walnuts that were in my pantry across the top just before putting them in the oven.

The tutorial is for making cupcakes but I looked high and low throughout my kitchen and was unable to find my cupcake pans (thanks DH!) so I adapted using a 9"x9" pan and a loaf pan.  It took these about 35-40 minutes to bake at 350 degrees. Do the toothpick test to check if it's done.

**NOTE!!** I didn't want to drag out my mixer to make this and I wish I had. The batter is thick and a bear to mix by hand! Lesson learned for my next batch! Wink

The cake is dense and moist. I also plan to add a dollop of cream cheese on my next piece. YUM!  Grin

I've been making this version for about 4 years now -- i make it all year long c: but I don't like to add nuts because i'm not a fan of nuts in food, but i like them by themselves. lol Cheesy

Ok, sprinkling the nuts on top is just messy. Nus fly every where as you try to eat it. Next time, I'll mix them in.

I think the spice cake is much better than the yello cake. Unless you use the canned pumpkin pie mix, the cake wouldn't have any "umph" if you know what I mean.
