Brrrrr!  Its chilly here!!!!  Cheesy

Some spicy cauliflower soup should warm me up! 

Gently fry a chopped onion, with cumin seeds, turmeric & curry powder.  Add a chopped cauliflower head & a large carrot, stir to cover with the spices.  Then add 2 pints of veg stock, simmer till soft.  Once soft, cool for a little while, then blend.  Reheat & serve. Easy!



I like a really thick blended soup, but you can always add extra stock to thin it out a little.  Full details & more photos on my penelope strawberry blog.  Wink

Yum-city!  Looks delicious and it's vegan too!  I'm definitely giving this a try!  Don't know if you know this little trick or not, but if you blend some cashew butter into your soups it makes them extra thick and creamy.  Smiley
