I found a recipe online, but changed it a bit.  I've never done any purposefully raw food before - this is good!
1 cup raw pumpkin seeds
1 cup raw sunflower seends
1 cup raw sesame seeds
Soak seeds in a bowl of water for 6-12 hours.  Drain, rinse and drain again.
Process seeds in food processor, add nuts if you wish (cashews, pecans, walnuts, almonds - raw, not toasted..kind of defeats the purpose if they're not raw).  I added some cashews and I think pecans would be quite nice as well.  Obviously almonds are your best bet for nutrition, but I'm allergic Sad.  I then added a bit of lemon juice (a tablespoon or less), about a teaspoon of minced garlic, a teaspoon of Real Salt (or sea salt) and about 1/4 teaspoon of black pepper.  I also gave it a good squirt of olive oil since it was pretty dry.  The great thing is that you could add just about anything you want for flavouring.  I'm not totally content with the way it tastes on its own, but I'm planning to spread it on tortillas or pitas and roll it up with some veggies for an appetizer.  If you were using it as a spread on crackers or chips, you might want more salt or more pungent seasonings. 
Basically you just process it until it's really smooth and then store it in the fridge.  It only lasts for about three days, so dig in quick!

oooh, nut pate.   i always make mine with walnuts and sunflower seeds. its really good with spouts and veggies in a pita.  sun dried tomatoes, and black olives are good with it too.
