Once upon a time, I thought I did not like beets.  I'd only ever had the kind that came out of a can, and i distrust things that come out of a can that are THAT colorful.

Then I discovered roasted beets, and came to my senses.  Beets really are an awesome vegetable:


So I knitted one for a friend, who loves beets so much she plans on getting a beet tattoo!  (She'd probably love that beet capelet, too, but my sewing skills are not up to par so this toy will have to do). 

Beets are great from a visual standpoint - I recently discovered there are gold beets and even candy-striped beets, so I might be making some sisters soon.  Thanks for looking!

though I just used olive oil, because where am I going to find pistachio oil  Huh, and I also had no lambs lettuce so I used parsley.  So yummy!

I love this! I'm on a one woman mission to get my friends to come around and at least try beets! I LOVE beets! Very cute. I hope to see some friends for her!

Your beet is just wonderful!

I too never liked beets as a kid and then luckily came to my senses! Beets (and especially yours) are awesome.
