My ex boyfriend was gluten intolerant, so we just ate a lot of gluten free pasta, though I don't think that's vegan.

Sorry I can't really help..

I searched google  Roll Eyes and found this:
http://www.glutenfree.com/recipes.htm
http://gfkitchen.server101.com/recipes.htm

But these are not specific vegan recipes.

I have a gluten allergy, and I'm, well, not vegan anymore, but still a lacto-vegetarian who cooks vegan at home most of the time. So I understand how crazy hard it must be for you two to get together as a couple and eat. I can give you tonnes of specific recipes if you're looking for something in particular, but otherwise things you probably eat (or can modify) that he can eat too are:

flourless peanut butter cookies - google for the recipe. very easy, just use whatever egg substitute you like, they all work fine.

fudge is easy to make vegan, too.

roasted vegetables and potatoes/sweet potatoes

soup. I crumble rice crackers or rice cakes into my soup when i want that sort of thing, your beau may or may not care to.

many asian, mexican, and indian recipes are fine. if you're eating out, i'm sure you both know your own hidden dangers (ie lard in the refried beans, tortillas chips being cooked fresh or reheated at the restaurant in the same fryer as battered things like onion rings, etc)

if you have a recipe for vegan gravy that you like, you may be able to adapt it to work with cornstarch instead of flour. if it calls for soy sauce  you may need to substitute for something wheat free like a wheat-free tamari, or braggs. have this with french fries. ore-ida makes seasoned fries and tater tots that are gluten free. very tasty. i don't know how sensitive your guy is, but he may not use malt vinegar either. in which case he'll be picky about which brands of ketchup he uses.

hummus and corn chips.

wendy's has baked potatoes and (near me anyway, double check anywhere you go) french fries that are not cooked in the same fryer with their other foods. so does chick-fil-a and mcdonalds, but they have lard in their fries. :p plus side salads and all on the 99 cent menu, to boot. prolly your only fast food choice.

corn or rice pasta and tomato sauce, or home-made pesto. if you have an asian grocery store near you, you may be able to find rice pasta there lots cheaper than at the health food store.

rice pudding made from soymilk.

casseroles and lasagna with sliced potatoes used in layers instead of noodles. I've also used many round rice paper sheets layered together in a cheesecake pan to make lasagna, and that's not bad either.

old fashioned corn bread with veggie chili.

tofu in all it's guises.

let me know if you need more help. Smiley
