I've seen references, but no actual recipes using honey - I've been scouring the internet to no avail.  Has anyone out there made something like this?  Please help!  (I have a ton of freshly made concord grape juice in the fridge just waiting for me to figure this out!)

I've been making jams and jellies for years and I've never heard of honey in a jelly recipe. I hope you find a recipe for it. It sounds yummy! Smiley

Here are a couple of websites that will clear the air for you for using honey in place of sugar.  I don't think you can completely remove the sugar, but you can get close.

you can replace up to 1 cup of sugar with honey in any jelly recipe with out it messing things up.  I do this all of the time

In the Sept/Oct 2008 issue of Backwoods Home magazine there is a recipe.
4 cups grape juice
3/4-1 cup honey
Pomona's Universal Pectin (4 tsp)
I've never made jelly before so I'm not sure if there is anything unusual about this recipe but it does mention adding 4 tsp of calcium water to the juice.
