Here are my first few batches of onigiri. The first batch had salmon in the center, the second batch (the ones with the flowers ) have crab meat in the center. I followed the instructions on the back of the Nishiki rice for the cooking instructions, but I was proud that they came out pretty because I hardly ever cook.

I made some with of all things, Jasmine (long grain) rice. Worked very well. I made them in balls rather than the triangles though.

sushiluvzombie, it is INCREDIBLY easy. You rinse the rice well, cook it, let it cool so you can touch it, then (lazy way) use cling wrap in a small coffee cup. Use enough wrap to sit in the cup and that you can grab, dump in some rice (experiment to get the size you want) then squish into a ball. plus, you can leave 'em wrapped for a later meal, or reuse the wrap and chow down right away (like I do Shocked)

Don't be afraid to make them, they're not as hard as they look and really, as long as you wet your hands it's not so bad with the stickiness factor either. If anything, you can always eat the rice if you can't get it to form into the shape you want Smiley
