I just made this using almond milk and it is awesome. Can't wait for it to freeze, I put in a tupperware container because I did not have the Popsicle mold, and of course I did add some Kahlua.

oh my goodness...! In Raleigh, we have a great little popsicle shop called Locopops and they have a Mexican Chocolate pop that is, wow, just wow. I must try this recipe in the warmer months ahead.

I'll have to make some this weekend.

Question: if I wanted to dip them in chocolate would I need a special chocolate product or would dipping them in melted chocolate work?

I decided to make these last night. I was having a hard time incorporating the cocoa powder, and instead of sticking with the whisk, i had the bright idea to put it in the blender... It worked as far as incorporating the cocoa, but it also became mocha whipped cream. Delicious mocha whipped cream. I'm excited to see how they froze.

All the talk of adding Kahlua has me considering using Crown Royal Maple instead of the syrup... Hmm...
