Yes! I'm working full time again so batch cooking is really nice to have tasty lunches and dinners so I'm not eating stupid Lean Cuisine all the time!

Chili mac is done! It is indeed a huge batch, I think it's even slightly more than 10 cups. It took some time as I used dried beans that had to be boiled first, but if you're using canned beans it's a very quick recipe. Don't do as I do: before you pour in your tomato sauce, double check if it's plain sauce. I noticed the smell of basil only after I poured the sauce into the pot. You dont really notice it though, because I added smoked paprika powder and it masks the basil.

We buy cases of produce wholesale (fruit, berries, fresh and root veggies) via a friend with a food business and freeze it, we have 2 small freezers. I use it for smoothies, soups and stews, casseroles, and breads. I was making fruit crumbles every couple of days but lately I've been baking and freezing a lot of loaves for my hungry crew.
Pictured here are zucchini, carrot, and banana breads, some with walnuts but most with chocolate chips or pumpkin seeds to keep them school/camp safe.
This is the amount I make every week or so, 2-3 loaves of each kind. We take one or more out of the freezer every day or 2. It's fine as is but very soft and delicious when warmed in the toaster oven and served with butter, cream cheese, nut butter, jam, etc. The whole family has it for breakfast, lunch, snack and dessert after dinner, they will actually eat it several times a day, lol. I usually cut the sugar by half and use whole grain flours to make it healthier.
The recipes I've been using are from simplyrecipes.com though I'm open to sharing faves because sometimes internet recipes are hit and miss.
 

I do give some away to friends & neighbours because when you're batch cooking like I do they make lovely, frugal gifts.

Looks yummy CLM! I think I'm going to get back to doing lots of spiralized zucchini. I took some to the beach this weekend when we went to visit the boyfriend's family and it was a hit.
