So I made this one up by accident ... just pulling together whatever was left in our house after my husband ate his way through most of the food (I was out of town for a few days), and it has quickly become one of my favorite easy chicken thigh recipes.



It's so so so easy. Basically cut up squash and carrots for the "bed", and top with roasted garlic. Then add your chicken... brush chicken with bacon grease (or oil if you don't have bacon grease), and bake in the oven about 40 minutes. I also added crumbled bacon in the last few minutes of cooking.

Just SO GOOD... I had to share. I added the link to my blog post up there ^^ in case you want the details and more pictures, but really this is all there was to it!

some of the most delicious things come out of necessity.  What kind of squash did you use?  I'm sure any would work, but I'm headed to the grocery store today, and this might be tomorrows supper!

mmmmmmmm, looks yummy ... we make a similar one but just not with squash ...  and we add beer.
I'll definitely have to try the squash though, looks so good!

I like the idea of roasting chicken pieces (instead of whole chicken) and veggies together at the same time!  I usually coat my veggies with a bit of oil and salt before pan roasting, but I guess the fat and juices from the thighs and the bacon grease, as well as the veggies being close together, would be enough to keep them from burning on the bottom.

I read in your actual recipe that you added pre-roasted garlic to the raw chicken/veggies... do you feel that has to be done, since garlic cloves would surely roast on their own in that amount of time?

I also wonder about the pre-roasting of the garlic.  I love fresh garlic and I think it would be good with the garlic cloves just tossed in there.  I probably would also use olive oil, since a lot of the time the chicken already has a bit of fat in it.

I love this whole idea, though.  Very simple and very nutritious.  Thanks for the recipe.  Well done.

Hmm, it probably would work fine without pre-roasting the garlic... should have enough time to get sufficiently roasty and soft while the chicken cooks. Smiley

The squash was just yellow summer squash.

And Diane, roasting them together makes it such a quick and easy dinner to whip up... sure you have to wait for it to cook but the prep time is very quick!
