I have been eating too much sugar since I discovered how to make caramel vegan!?!!

This stuff is addictive and tastes like a real caramel, nut, choccy bar! My teeth hurt!



Yum!!

Stuff you need:

1 cup Nutterlex
1 cup brown sugar
1 cup white sugar
2 cups soy milk
1/2 cup glucose syrup
1/2 cup malt syrup

Put it all in a DEEP saucepan and cook on medium heat still it gets real fluffy and huge, stir stir stir...make sure it doesn't burn, watch the consistency and colour and you'll see it change and get thick. You will need to make sure it gets really hot. I test to see if it's ready by popping a little spoonful into the fridge/freezer and see whether it sets. The longer you cook the harder it'll set. I have burnt my finger and tongue making this by being inpatient, please be careful!

Take off heat and carefully pour onto a tray lined with baking paper.

Add stuff to it like crushed nuts and melted vegan choccy. Once I added crushed nuts, a layer of chocolate whipped cream and then rolled it up, cut into pieces and dipped into vegan chocolate, yum! I got chocolate everywhere haha! This would also be an amazing caramel sauce for icecream!

Have fun making this, it's addictive!!!

This looks yummy - thanks for posting the recipe! I´m kind of addicted to sugar, and when I started to consider veganism I thought I´d be stuck with dark chocolate for the rest of my life  Sad, but I´m slowly realising how many possibilities there are  Grin.

I looked it up, and it's a margarine in Australia.  Folk in the US/Canada can use Earth Balance (that's my preferred vegan margarine).  Now, where to find glucose and malt syrup...
