I have some upholstery leather and would love to try and make a bag with it. It's a little soft to stand up... can you put interfacing on it to stiffen it? or will I just need to make something a little more free form?

If you use interfacing I'd use sew in. leather reacts poorly to heat if you aren't careful with it so avoid iron on interfacing.
Personally though I think you'll be fine to just make a  "floppier" bag and line the inside with fabric. leather is tough stuff.
