Hello, I thought I'd share my tasty tea.



I used:
one aubergine
two peppers sliced
sliced tomatoes (I used 6 big plum toms)
one red onion sliced into rings
a clove of garlic crushed
handful of spinach leaves
black pepper & herbs (i used basil, oregano & rosemary)
100g hard goat's cheese chopped into chunks (can replace with your fave cheese)
handful of sunflower seeds

Firstly prepare the aubergine, cut into slices, place in a colander and cover with salt.  Leave this for about 30mins.  After this, rinse the slices well and dry in kitchen towel.  Once dry fry in a little oil till brown & leave aside. Then gently brown the red onion and garlic clove.  In an overproof dish layer the aubergine, tomatoes, pepper and onion slices, goat's cheese, spinach leaves, herbs & black pepper.  The last layer should be plenty of tomato slices, cheese and sunflower seeds.  Cover and bake in an oven for about 40mins, serve with green salad & crusty bread. Nom nom nom  Cheesy
