I take goodies into work at least twice a month, half the time store bought donuts, half the time homemade (from a box mix) cupcakes, and very rarely something else if it seems easy enough and worth the effort of making large amounts for my piggy co-workers! I saw this in Real Simple magazine and had to do it!
This includes my changes to the recipe, including doubling it and cutting much smaller pieces to yield more servings.
Servings: 36 small pieces (most people ate at least 2)
1 box puff pastry (16 oz), defrosted
1 large egg, beaten with 1 T water
1 T Granulated sugar
8 ounces cream cheese, softened
1/2 cup heavy cream
Zest of 1 lemon, grated and finely diced
Juice of 1 lemon
1/4 cup powdered sugar, 2 T powdered sugar, divided
2 cups blueberries, washed and dried on paper towels
2 cups strawberries, washed, dried, and thickly sliced
1. Unfold the pastry and gently cut each piece into the 3 rectangles that it was folded into. (Original recipe was for 1/2 a box of puff pasty/1 sheet/3 rectangles, this uses entire box/2 sheets/6rectangles) Brush each rectangle with the egg wash and sprinkle with the granulated sugar. Bake on parchment paper lined (or flour sprinkled) cookie sheet at 375 degrees for 18-22 minutes.
2. Beat the cream cheese with the 2 tablespoons of powdered sugar, lemon juice, lemon zest, and heavy cream until smooth.
3. After the pastry cools for 15 minutes or so, spread the cream cheese filling on the top. Sprinkle the berries and then a use a shaker or sieve to get a nice layer of powdered sugar on top.
Cut each rectangle into 6 pieces. Store in fridge.
* I was a weensy bit disappointed when I was told these were the best treat I have ever brought in...since they were so ridiculously easy! But first time using puff pastry, and it was very simply and tasty!
