I went and picked some more blackberries yesterday morning but didn't have room in the freezer for them so I decided to make this super easy and yummy cobbler instead. 
It was sooo delicious!





It's Really easy to make too. 

In a large bowl mix 2-3 tsp of cornstarch with 1 cup of sugar

Stir in 4 cups of berries

Let sit until berries start to absorb sugar

Pour into casserole dish and dot with butter or margarine

Then cover with pie crust and sprinkle sugar over the top

Bake at 350 degrees until crust is light golden brown

Top with vanilla ice cream and enjoy!

I made a homemade crust but you could easily use a store bought one.  I just love homemade crust though.

Thanks!  The strips aren't exactly even but my 21 month old was helping so it was worth the less than perfect outcome!
