I used Martha Stewart's recipe for crepes and added on a Polish twist from traditional naleśniki.

The filling is just farmers cheese with honey and  a little milk to create the smooth consistency and grated in a little lemon zest for flavour. The garnish is candied lemon [I watch too much of The F Word] and something green from the garden. Of course somehow all of my mint disappeared.

they are not hard at all!
and this is coming from someone who cannot make pancakes!

All I did was add a tiny bit of vegetable shortening and then poured in enough batter to coat the bottom of the pan. You dont want them too thick and just flip them over as soon as the top is no longer wet. Traditionally we make them at home with jam but sometimes like today we make them with the cheese filling but you can also do them as a savory dinner food too
