So I found this recipe for lemon curd the other day on Chickens in the Roadhttp://chickensintheroad.com/blog/2010/07/15/making-lemon-curd/
It turned out so yummy! see? isn't it beautiful?

But then I had to decide what to do with all that delicious lemon curd, I couldn't just eat all with a spoon, though I was sorely tempted, let me tell you! So I decided to make thumbprint cookies and put the curd in the print. So I found a shortbread recipe http://www.joyofbaking.com/shortbreads/shortbreadcookies.html and got to work.

So here you have it, my completely from scratch super yummy lemon curd shortbread cookies

they were so delicious, they're already gone.

Oh I bet those are tasty! I love short bread and lemon curd but it never occurred to me to put them together. Smiley

they're great together! at first bite I thought maybe the cookies didn't have enough sugar, but once you get some of the lemon curd and the cookie together it's perfect! the tangy sweetness of the curd balances perfectly with the buttery subtlety of the cookie.

if you want to give this a try, the cookies are about walnut sized pieces, shaped into a thick disk. then squish down the middle with either a finger or a the back of a spoon and spoon in some of the curd. they took a little longer to cook than I expected. about 15-18 minutes (I can't be sure, I just kept restarting the timer for a couple more minutes) at 350 f.
