This pie is a perfect thing to take to a summer party - easy to make, few ingredients, cheap, and super yummy!

You will need:

1 can condensed milk
2 lemons
1 cookie (graham or other) crust
1 container of frozen whipped topping (like cool whip) - defrosted
2 cups of your favorite berries (approx. more or less is fine)

Start with a large bowl, lemons, and condensed milk:



Roll the lemons with your hand to free the juice:



Cut them in half



Juice them into a large bowl



Mix in the condensed milk



Add the berries and mix them in





Fold in the whipped topping



Pour/scoop into the crust





Cover and freeze overnight (or as long as you can stand it, LOL)



Defrost a little bit and serve! Yum!!


To make a similar pie that is an old family favorite, mix 2 cans condensed milk and juice of 4 or 5 lemons. Poor into graham crust and refrigerate a few hours until set. Top with whipped topping and serve. Voila! Easy lemon ice box pie, my Dad's all-time favorite (we have it on his birthday!)

I've made this with strawberries and strawberry Cool Whip.  I made it for a strawberry contest at my office.  Everyone liked it.  Next time I'm going to try it with regular Cool Whip.  Your lemon version sound good to.  I love lemon.

Tried this this morning so haven't tasted it as a pie yet but the filling is yummy.  I used one lemon because they were really juicy.  Frozen blueberries and strawberries since I always have those. Was going to use a flaky type crust since I had one but it had gone funky in the freezer so made a crust with Vanilla Wafers and shortbread cookies.  I had way too much filling left over so I put it into two freezer containers and am planning to use them as ice cream.
We'll definitely be making this again.  I can already tell.

another variation is to use the coolwhip and condensed milk, then add a package of your favorite Kool Aid.
Also very yummy. Use a smaller container of coolwhip for a tart pie and a larger for a sweeter pie.

I am excited about trying it with the lemon juice and berrie, sound yummy! Grin
