i saw this recipe on smitten kitchen and i've been dying to try it. i finally got around to it today and i am thrilled. it was a million times easier than i thought and also so much fun! i took pictures of every step just so i could remember this moment Tongue i'm totally kidding but i really am proud. i sent my mom to get me some brown sugar and chocolate so i can make graham crackers while the mallows chill and then we can have some s'mores.

here is some sugar, corn syrup, and water boiling. this is the first time i've ever boiled sugar and didn't mess it up Tongue


note to self... sugar at 240 is HOT. the tiniest of drops fell on my hand and it burned like a mother


the next step is to pour the hot sugar into a mixing bowl that has gelatin and water. the whipping part is amazing! this is the mixture after it had been whipping for 1 minute


three minutes


after 6 minutes


fluffyyyy


now in go two beaten egg whites and a Tbsp of vanilla


into a greased and powder sugared pan


to chill for at least three hours

they should be ready in about an hour. i know they're going to be delish because the fluff that was left over on the beaters tasted really good. i'll post pictures once they're done.

Yum!! Those look great! I've been wanting to make some homemade marshmallows but the whole cooking sugar thing kind of scares me since I have troubles keeping the stuff I'm mixing in the bowl. But you have given me hope, I might just have to try this one. Grin

I am soo wanting to try making marshmallows..I ALWAYS see awesome flavor combos..I'd love to make my own..

awww thanks everyone for the sweet replies. seriously for those of you that want to try it just DO IT. honestly, if i can do it anyone can do it  Wink

so here are the pics of the marshmallows in action. sadly there was some miss communication with my mom and she brought me graham crackers instead of the brown sugar i needed to make them from scratch but the s'mores were still good!


it seems like its super fluffy and delicate but it isn't so don't be scared!


i put tons of powdered sugar to make sure it didn't stick


more sugar...


Deb [from SK] suggested oiling up the knife to make it less sticky and it definitely worked


tossed in some MORE sugar  Grin
