Recipe courtesy of I♥cuppycakes (my favourite blog ever!!!) Can be found here: http://iheartcuppycakes.com/2009/06/22/iron-cupcake-4-summer-berries/

I made these with just a regular cream cheese frosting instead of the marshmallow/cream cheese combo. We tried it out but it was just too thin and didn't hold up shape. We used it for fruit dip instead. Smiley

I made these for my friend Amanda's birthday this past weekend. I kept some at home for the fam and they said they were the best cupcakes I've made besides the crème brulée ones (also an I♥cuppycakes recipe: http://iheartcuppycakes.com/2008/07/19/creme-brulee-cupcakes/ ) which I forgot to take pictures of when I made them. Oops! Anyways, here are the strawberry filled chocolate with cream cheese frosting beauties:

all ready for transportation Smiley

Ok, these look good enough to eat.  The first picture looks like a rose on top of the cupcake.  Very nice.

They look great!  Thanks for sharing the recipe and for the information!!!
(One of my biggest pet peeves is when people post pictures of something on the COOKING boards, and don't include the recipe.  Talk about a lack of DIY spirit!)

This looks so Delicious.  Great idea "hidding" the strawberry.  Great combonation of flavors.
