After watching Julie and Julia today I got extremely hungry...so off to the store and kitchen I went!

Its garlic artisan bread, toasted under the broiler (keep an eye on it so it doesn't burn!). While that was going, I diced up green, red and yellow bell peppers and sauteed them with some olive oil and garlic. I threw in a can of partially drained diced tomatoes with basil, oregano and garlic. Cooked it down til only a little liquid remained. Then buttered one side of the bread, topped it with the mix from the pan and some mozzarella and threw it back under the broiler til the cheese melted.

It was absolutely delicious, if I do say so myself Grin

Thanks! It was ridiculously easy and quick to throw together. And considering I didn't eat tomatoes or peppers up until recently, I think its a snack I'll be making quite a bit Tongue

Random snacks taste the best. Though, for extra garlicky-ness, I would rub a peeled clove of garlic on the toasted bread pre-buttering. That'll keep the vampires away.

You should! I can't wait til its summer here and I can throw in more veggies that I "creatively acquire" from my parents gardens Wink I'm especially looking forward to adding some zucchini.....mmmm. Now I'm hungry, haha
