I made this for my dinner last night & it was delicious if I do say so myself  Cheesy  For a vegan alternative replace the paneer with tofu.

Firstly make a marinade, mix together:

4 tablespoons of olive oil
1 inch of grated ginger
1 crushed garlic clove
1 teaspoon of cumin seeds
half a teaspoon of mustard seeds
half a teaspoon of turmeric
1 teaspoon of chilli flakes
half a teaspoon of fenugreek leaves
5 cardamon pods

In the marinade add a courgette, 2 peppers, 6 spring onions and a block of paneer (all chopped in to chunky pieces).  Stir well, cover and leave for an hour.  Then put the mixture in to an oven proof dish and put under a medium grill for about 20mins, stirring regularly.  Serve with a simple green salad and enjoy  Smiley

Sorry, paneer is a type of Indian cheese, its a bit like a cross between tofu and halloumi (not as salty as halloumi, but more cheesy and solid than tofu - if that makes sense!)

Looks awesome! 

You can also make your own paneer at home very easily.  And all paneer is rennet free (the only two ingredients are whole milk and an acid like lime juice), so it's a good choice whether store bought or home made.

Looks great! I make my own paneer, but I don't have a lot of good recipes, it usually end up in a spaghetti or in a romaine salad.

I don't know what "courgette" is, but that looks to be askitameg timeno...zucchini?  Is it another word for the same thing?

 Cheesy  in my native language it's "n'askitameg timeno" in english it means "long skinny green melon thing that is not a cucumber but is good to eat" (we can say a lot in a little space!) and means courgette.  I like them sliced crosswise, (into rings) marinated in oil, vinegar, oregano and garlic overnight and then grilled outside or in, but outside is best...YUM.  Your marinade sounds even better!!

I tried making paneer once... it went horribly wrong.  I've never seen it for sale in a grocery store...
