I made s'mores cupcakes a while back, but I wasn't too satisfied with them. So I re-made them today, and I'm much happier with the results.

SPECS: Chocolate Butter Recipe Cake, Marshmallow Buttercream, Graham crackers, Hershey's chocolate piece.

Second time ever piping frosting.



Before adding graham crackers and chocolate...

With just graham crackers...



With Hersheys chocolate pieces.

And, just because I thought it was a neat shot...

It's a really modified version of one I found online. I'll post it for you. It's enough for 24 standard sized cupcakes.

You will need:
2 sticks (1 cup) of unsalted butter, softened
1 large (13 ounce) jar marshmallow creme (or fluff)
2 cups confectioners' sugar
1 teaspoon vanilla extract

To make:
-Beat butter in a large bowl with mixer on high speed until creamy.
-Once it's at a creamy consistency, beat in marshmallow creme until well mixed. I find that if you have a hard time getting the creme out of the container, use a metal spoon and run it under hot water and use that spoon to get the creme out and off easier.
-Reduce speed to low, and beat in confectioners' sugar and vanilla. Taste it after you've beaten in the sugar and vanilla. If it still tastes buttery, add another 1/4 to 1/2 cup of confectioner's sugar to taste.
Increase spead to high; beat until fluffy.

It's pretty simple, and turns out pretty good. :]

I really should stop looking through this section... Your cupcakes look so delicious, and they look very professional!  Love the piping and the dusting of graham cracker crumbs on top and I'm totally impressed that this is your second attempt at piping. Cheesy

i was wondering if there is an alternative to using the marshmallow fluff in a jar?  i don't think i've ever seen that stuff here in the UK, and i doubt i could easily obtain it locally.  a quick google showed a few recipes using microwaved marshmallows, but i'm not sure if they would come out with the right consistency for icing like this.

any opinions?

Thank you! I was just looking at your cupcakes and squealed a lot at how amazing your decorating was. They're all so pretty! I especially loved the one with the blue frosting and rainbow lollipop. Thats adorable. :]
And I've been looking for one, actually. Michigan sucks for jobs, though. D: And on top of that, I don't think there's a bakery within 20 miles of where I live. lol
