hi i just have a quick question. my boyfriend is obsessed with carrot cake. so i have pretty much resigned myself to making him one, altho i think i may mix it up by making carrot cake cupcakes.

anyway i was wondering if anyone has any suggestions/recipes for an easy carrot cake? or even better, hhas anyone tried carrot cake from a box? has it been any good?

keep in mind, he loooves carrot cake, so i will definitely have a tough critic.

any and all suggestions are welcome. thanks!

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon powder
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 cup sugar
1/2 cup oil
2 eggs
2 cups grated carrots
1/2 cup chop nuts (optional)

1) In a mixing bowl, beat sugar, oil, and eggs for 1 minute on high speed with an electric mixer. set aside
2) Sift flour, baking powder, baking soda, salt and spices. Stir in flour mixture with liquid mixture.
3) Stir in carrots and nuts.
4) Pour into a greased loaf pan and bake for 55min @ 350 degrees Celsius.


I've been making carrot cake since I was a little girl and people always seems to like this recipe, especially diabetics :] Just a suggestion! good luck and hopefully your boyfriend likes it  Cheesy

350°C? Are you sure that shouldn't be 350°F? I've never seen a °C oven go past 250°

Carrot cake from a box isn't bad... I just always add smidgens of stuff to it.. cinnamon, honey, nutmeg...whatever's on my mind that day.
