So I'm in love with the look of scrapbooks & would love to make one for my son's baby book. But everything is so much money & I know nothing about scrapbooking. Any tips on how to do it, and affordably?

I don't have much advice since I just got back into scrapbooking, but here are a few tips.
You can get supplies for really cheap at Dollar stores and Wal-Mart. I prefer to get my supplies at Michael's, but it can be more expensive than other stores. However, if you sign up on their site for emails, they will also email you coupons. In the past month I have gotten two 50% off coupons and two 40% off coupons, which let me buy an entire baby boy scrapbook kit that was $50 for only $25, which is pretty good. I ended up saving $43 the last time I went which made me pretty happy!

Hee, hee!  I don't buy ANYTHING unless it's on sale!

A great place to check for inexpensive scrapbooking supplies (if you have one) is Tuesday Morning.  Last week, they had 25-sheet packs of American Crafts cardstock for $1.99 (!)--and I bought every color they had!  They also had K&Company 12x12 albums for $7.99--the very same albums I saw later that same day at Barnes and Noble for $29.99.  They always have K&Company and Anna Griffin embellishments for around $3.99.

Walmart is a great place to stock up on cardstock packs.  I agree about signing up for Michael's coupons, and also for Joann's coupons.  And, if you're in the mood for a ton of patterned paper, Joann's is having a Memorial Day sale this weekend, and they have a box of 300-sheets (!) of K&Company paper for $19.99 (regulary $39.99).  They also regularly have their paper embellishments for 30-40% off if you just wait for the sales.  Michael's also regularly has great sales with stuff for 30-40% off.  Both stores rotate what's on sale, but it's often.

And, stamps are fun.  And since you're just starting out, you should consider the G Studio $1 stamps at Michael's and Joann's.  They have both wood-mount and acrylic stamps.  They also have $1 mini stamp pads.

HTH!

My suggestions -

Think simple! The simplier the design, the less expensive it will be since you'll be using less layers of papers, stickers, and other embellishments.  Personally, I think a page with a simple paper, a photo, and a few handwritten words looks great!

Be creative! Think outside of the box. Try gift wrap, wallpaper, or fabric instead of scrapbooking papers. Use greeting cards, ribbons, buttons, etc instead of expensive embellishments.

And as everyone else already suggested, keep your eye out for sales. But avoid going crazy! Just because it's a great deal, doesn't mean you need to buy it! I like to plan out what I'm going to do before I go shopping and only purchase things that I know are going to compliment the photos and mementos that I'm already planning on using. That way I don't have a big pile of expensive leftovers that I know I'll never use!

You can buy a kit with just what you need for the baby album.  The kit may seem a little high but if you get everything you need you don't waste money buying a lot of stuff that you won't use.

Here are a couple of great baby album kits link:
