Hmm -- I've eaten dandelion heads, but not fritters made of them -- you'll have to tell me what that's like!
To infuse an oil, just stuff a jar full of the plant you want to use (it's best to do with fresh plants), then pour oil over it and to the "shoulders" of the jar. Close it and leave it on a sunny windowsill for a month or two shaking it every day. I hope that helps. Smiley
