Quick question... (I don't know how to do knife pleats) Did you just fold the material straight over, pressed it, and then do another one RIGHT next to it?
You can do them that way, but it will take you a looonnnngggg time.
The best way to do it is to lay your fabric on one of those cardboard fabric cutting boards and cut the fabric to the dimensions you need (the cut length has to be 3 times the finished length).
Once the fabric is cut, fold it in half length-wise and place it back on the cutting board and line it up with the lines on the board. I usually push pins through the fabric into the board, so the fabric will stay in place.
Take some sharp scissors and snip the fabric along the long edge every inch (if you're doing 1 inch pleats). Do this on both long-edges.
Pick up your fabric and begin folding it matching the "snips" and pinning as you go. You will need a lot of pins for this, but you need to make sure that when you pick up your fabric that the pleats will stay in place.
Sew along the long edge of the fabric to hold the pleat edges in place. After you have sewn both edges, lay your fabric out and manipulate it to get the pleats even and then press your iron straight down on the pleats to lock them in place.
