I made navy bean and kale soup! I know it's summer and I live in Louisiana, but it got a bit chilly and I needed to use up my kale. I'd never actually cooked with kale before, but the soup was delicious! The boy went back for seconds, and he almost NEVER goes back for seconds. Great, now I'm hungry.

I'm having pita pockets filled with a chickpea salad. The salad is chickpeas (clearly), kalamata olives,  & artichoke hearts seasoned with fennel, rosemary, garlic and onion and then tossed with olive oil, red wine vinegar and lemon juice.

The chickpea salad recipe was a variation from a recipe from Vegetarian Times - the original calls for fresh fennel, which they don't stock at my regular grocery store.  Sad

we're having a chef salad with tofurky, tomatoes, egg, onion, cheese, and avacado with ranch dressing. garlic bread and watermelon on the side.

I made pasta salad and marinated grilled eggplant with grilled carrots. It was absolutely heavenly, but i'm kicking myself for not writing down the marinade for future use. I love eggplant, and this was the best tasting eggplant to ever grace my lips. Curse my lack of planning!
