somehow i've never heard of/considered making cookies with cake mix! i tried these last night and they are YUMMY! thanks for sharing Cheesy

I use a much simpler recipe, sometimes mix in extra ingredients (chocolate cake mix with chopped andes mints, or chocolate chips and pecans, for example).  My favorites (and the ones that get the rave reviews) are lemon, strawberry or butter pecan(which, sadly, I am no longer able to find locally).  I've tried all different flavors and brands of cake mix, and all have turned out well.

The recipe:
Mix 1 box cake mix, 1/3 c oil and 2 eggs (or 3 egg whites if using white cake).  Roll into 1 inch balls, then flatten with the bottom of a glass dipped in sugar.  Bake at 350 for 8-10 minutes (I stick closer to 8 minutes, I like them really soft). 

I know the lemon sounds weird, but just try it - totally delicious, and totally easy.  These are my go-to cookies when cookies are needed and I don't really have the time to bake (school bake sales, kids lunches).

Yellow Cake with butterscotch chips....

My mom makes ones like these but adds white chocolate chips to them. Too tasty!
We also made lemon ones once that had Rice Crispies in them, which was oddly tasty. Like little pops of tasty inside more tasty.
