mmm, lemon cupcakes. My favorite.



I used this lemon cupcake recipe (because I only wanted 12, and it seems very complicated to half a recipe) with meyer lemon juice and zest, and baked them as per the recipe. Then I scooped out the middle and filled them with meyer lemon curd. Super yummy!

Also, I never know what to do with the cupcake innards that you scoop out for filled cupcakes--I hate throwing them away! So I made a little lemon parfait with mine, with extra lemon curd and strawberries. Very delicious for breakfast!

also, I've seen it written a couple times online but am still not sure exactly what it is ... is meyer lemon juice a type of juice made from lemons called meyers, or is it a brand?

i know there's a chain of stores call meyers in the states, so this question may seem a little silly  Embarrassed

Ninjanator, meyer lemons are a type of lemons--they're sweeter and larger than regular lemons, and their rind is lovely and aromatic. I saw boxes of them at my grocery store and couldn't resist!

This recipe would work fine with regular lemons though--in fact, I kind of prefer regular lemon curd, meyer lemon curd is a little too sweet for me.
