My husband and I decided to make Beef Wellington for dinner tonight.  I'm the chief cook, he's the sous-chef.   Tongue

First, the finished product:


Duxelle (two types of mushrooms, onions, garlic, thyme, fresh chives from the garden (yay spring!)):


Assembled beef wellington:


And fresh from the oven - mmmmm, medium rare!

Yes they do and I really want to try one.  Hubby and I are going to go to one of the Hell's Kitchen winners' restaurants next year and I already decided I'm gonna have a beef wellington and risotto!  I don't really know what either of them are, but that's the popular ones on Hell's Kitchen!

Thats actually numer one on dishes I'm a little frightened to try, but should.  I can pretty much cook just about anything the first time, but after watching Hell's Kitchen and all the problems people seem to have cooking it, I'm a little gun shy

Beef Wellington is incredibly easy to make assuming A> you're not nervous as heck, B> you have plenty of time, and C> you don't have Gordon Ramsey screaming at you like a rabid lunatic.


It's popular in cooking competitions because it's an incredibly classic dish that still meets the demands of the modern palette, but almost no restaurants actually bother to make it on a regular basis.  It is at once both familiar and unusual.
