I have made this pasta salad a few times this summer. It's so easy and fast!

You will need:

1 box miniature pasta (I used "Piccolinni", and small shapes will work fine)
1 bag frozen "southwestern" vegetable blend (I used Target's Archer Farms blend)
1 small can of pineapple chunks (drained)
1 package of diced ham
1 jar of salsa-ranch salad dressing (I used litehouse brand)

Boil the pasta
add the veggies a few minutes at the end to defrost
Drain and rinse with cold water
add pineapple and ham
add salsa ranch dressing and stir well
refrigerate until chilled
Eat! Yum!

You can leave out the ham or substitute kidney beans for a veggie version!

so how much is the flavor changed by leaving out the pineapple?  probably a lot right?  yeah...well, I'd still make it, only substitute the pineapple with kidney beans.  Wink

Well, I have made it with various amounts of each ingredient. I happen to love pineapple, so I add it, but the overall flavor is the same in bites without it, so I think it would be fine!
