Hello!
My birthday was on 12 March, so I made myself some cupcakes. I shared them with my book arts class, and I tell you something. You get three dozen cupcakes and 28 college kids in the same room for 6 hours, and they get a bit ravenous near the end. lol.

Anyway, all I've got right now is my crappy cell phone camera photos, but I'll update them when my friends get around to sending me the photos. >.<

Like I said, they're your standard Rainbow Cupcakes, but I made a strawberry buttercream frosting and piped it on. This is an ugly one. We ate all the extra ugly ones before anyone else could see them. lol

With frosting. Ignore the shoddy piping job, it was my first one. So I ate it. Tongue
But the icing tasted amazing, really.

can you give me your icing recipe?? I know it's probably strawberries added to buttercream frosting, but i seriously am afraid of anything to do with the kitchen unless i'm given very specific (down to the last detail) instructions!! Tongue

I love your cupcakes. I love to make rainbow ones although it takes forever splitting the colours. How did you make them so bright??

As to the colors, I have no idea how they got so bright. I was completely sure that they wouldn't come out that bright, but I was pleasantly surprised. I just followed the instructions on the back of the box of food coloring.

I didn't have an issue with it having a nasty food coloring taste. Just be careful with the red, I guess. :/

These are cool. I make these all the time, but I just use regular, plain white frosting on mine. I will have to try out the strawberry butter cream recipe!

Pleased to report that we could not taste the food coloring in our cupcakes, which were very colorful.

The one thing I did note, however, was that it was a little hard to judge how to dose out the batter evenly, and to have the correct amount in the paper at the end.  Next time (everyoneloved them, so there were certainly be a next time!) I will probably put the batters in disposable pastry bags to pipe it in.

My daughter was super happy with her birthday cakes!   Smiley  Thanks for the wonderful idea.

Aw, they turned out so good!
I noticed that it was rather difficult to judge just how much to put in the cups. I had a couple overflow, so I just cut the tops off and frosted the hell out of them. lol

I used liquid, but you can use either. I hear that if you use gel, you don't need as much and therefore don't run the risk of tasting it (especially in the red). The gel is supposedly much brighter, too. I just used what I had. :]
