This is a family favorite that is usually saved for a cold day.

1 bag of frozen mixed veggies.  (I like the one with the pumpkin, celery,squash,onions, cabbage,carrots etc.)
5 cups water
Juice from one lemon
1\4 cup oil
Salt, pepper to taste
4 T. Chicken soup powder (or Veg. soup powder)
1\2 t. turmeric

Note:  I like to add a can of chickpeas

1.  Heat oil in soup pot and lightly fry vegetables.

2.  Add water and lemon juice and bring it all to a rolling boil.

3.  Add your spices and cook on medium heat for about 20 minutes.

While the soup is simmering, make your couscous following the directions on the package.

I found a special couscous steamer on sale and grabbed it.

So I make mine over the simmering soup.

When the soup is done then just put some couscous in the bottom of your bowl and pile on the veggies and soup.

Thank you for your comments.  It really is a very fast and hearty meal.  Esp. on a cold day.  Least amount of effort with the most amount of results.
(Did I say that right?)
BTW I also add the liquid from the chickpeas.
