I just got a new recipe book. Can you believe they make a recipe book called "The Starving Student Cookbook"... well they do. LOL I got it because I need to start eating at home more often with simple/quick recipes. So here is what I'm trying today.. it's called Strawberry Delight Pie. I will post some pictures here in a bit. Tell me if you think it sound good.

- 3 - ounce package STRAWBERRY GELATIN
- 1/3 cup BOILING WATER
- 14 ICE CUBES
- 8-ounce carton small curd COTTAGE CHEESE
- 1 BANANA sliced
- GRAHAM CRACKER CRUST - premade

step 1: dissolve gelatin in boiling water in large bowl. Stir 3 minutes. Add ice cubes and sir 2 more minutes. (gelatin will start to get thick) Remove excess ice cubes.

step 2: add cottage cheese and stir well to blend.

step 3: lay banana slices in bottom of pie crust. Spoon gelatin mix over bananas and chill 1 hour before cutting.

I'm making this for my boyfriend.. will not try it until tonight. Smiley Tell me if you have heard of anything like this before because the thought of cottage cheese kinda scares me, or if you think it will be any good.

its not something I would have thought of....but you can get cottage pie with pineapple chunks, so I bet it will be delish!
cant wait for the photograghs! Grin
its like a cheesecake cottage cheese style?

IT was pretty good actually just make sure you add a little extra banana too it and also make sure you keep it vERY cold because I took it for a 45 minute car ride it got a little warm on the way .. and set it on the counter and then ate it.. wasn't very good set in the fridge about an hour later tried it again and it was much better lol.. I wanna try it with some different flavored Jello! :\ Also.. going to post pictures tonight .. as promised. I'm at work right now..
