I made these bad boys yesterday. Vegan chocolate cupcakes with dark chocolate chips topped with lemon buttercream frosting and dark chocolate drizzle candy.

I had no idea how well dark chocolate and lemon go together... These were great Smiley

The little vegan in me is very jealous...those look DELICIOUS..! 
I've been thinking about playing and varying some recipes I've found in Vegan Cupcakes Take Over The World... but my results won't be anywhere near as beautiful looking as yours!!!

Citrus and chocolate is SO delicious.  You made them so pretty too!  Is this from a cookbook or your own recipe?  I'd love to try it!

aw thank you Smiley thats sweet! im not vegan [anymore], but i really prefer to bake vegan just because [a] its cheaper, and everything just turns out so freakin moist. most of the time i give out these cupcakes and people comment on how amazing the texture is and ask me the secret... its vegan. lol

p.s. its super easy to make pretty cupcakes! just be unemployed with way too much time on your hands hahaha

yeah ill totally share!!

Super Choco-Lemon Cupcakes!

1 1/4 c All Purpose Flour
1 c Granulated Sugar
1/4 c Cocoa
1 tsp Baking Soda
1 c Room Temperature Water
1/4 c Vegetable Oil
1 Tbsp Distilled White Vinegar
1 tsp Vanilla Extract
1/2 c Dark Chocolate Chips

Preheat oven to 350 and line muffin pan with cute cupcake liners.
Sift together cocoa, flour, and baking soda. Mix sugar, oil, vinegar, and vanilla. Slowly add dry ingredients to sugar mixture alternately with the water. Mix slowly til smooth. Fold in chocolate chips.
Fill muffin cups 2/3 full [dont overfill!!] and bake for 20 min.

For the frosting, it's just a buttercream with extra sugar [to make it more still to hold the candy upright] with lemon extract instead of vanilla + a touch of yellow food coloring.

For the candy, i just melted down some dark chocolate chips + a touch of vegetable oil in a double boiler, drizzled it around on wax paper with a spatula, and stuck it in the freezer. after a few hours it was set and i broke it into 12 pieces and stuck them in the frosting!!
