hey.  i know all you vegans out there dig granola, right?  post some crunchy favs, please!  i'm having issues with getting big clumply chunks in mine, nothing's sticking together very well.  help!

how strict of a vegan are you?  I'm only asking because I use raw honey to bind my granola, but I know that it's not for everyone.

I used this recipe as a starter:

It uses molasses instead of honey.  I also found some recipes that use maple syrup, which is really nice.  I bought a ton of dried fruit and nuts at Trader Joes to make all kinds of tasty granola-- no honey necessary!

here's my recipe-i used to make this at a bed & breakfast i baked for, and guests truly raved about it-i get quite an inflated ego when people try this.  the rice syrup really helps get those clumps.

10 cups oats
1 cup flax seeds
2 cups sunflower seeds (unsalted, raw or toasted)
1/2 cup sesame seeds
2 cups almonds (chopped or slivered, raw or toasted)
1/2 tsp. salt
1 Tbs. cinnamon
2/3 cup canola oil
3/4 cup rice syrup
1 1/4 cup maple syrup
1 Tbs. vanilla extract
1 Tsp. almond extract (optional)
2 cups dried fruit (chopped apricots and cherries are very, very good in this)

heat oven to 300, lightly oil your pans (the biggest you've got)
combine the dry ingredients in a big bowl.
combine the wet ingredients and whisk together, then stir into the dries.  spread onto pans, no more then 1/2 inch thick.  bake, checking often and stirring around as needed to bake evenly, until granola is a nice golden brown, about 30 min., depending on your oven.  cool on pans.  stir in dried fruit last.  makes over 4 pounds.  enjoy!

What is granola...couldn't really work it out from the recipes I found.  Is it museli (cereal you eat in a bowl) or flapjack (kinda.... oat biscuit things) ??

And while on the topic (of vegan recipes that is) does anybody have a recipe to make your own fake sausage mix?  Do you know what I mean?  You buy a box of the stuff (sosmix?) add water and then fry/grill.

peatbogfaerie-granola is pretty much muesli, but mixed with oil and sweetener and toasted in the oven first.
