This is a variation of a choco-chip recipe i make for my fellow co-workers.  Because there is no egg, they come out super fluffy and light.

2 1/2 Cups - All purpose Flour (i use Arrowhead Mills Organic White)
1 Cup - Rolled Oats
1 -  very ripe banana (i normally throw ripe bananas in the freezer for baking later)
1/2 tsp - Baking Soda
1/2 tsp - Baking Powder
3/4 Cup - Margarine (i use earth balance non-hydrogenated)
1 tsp - Vanilla
3/4 Cups - Sugar (you may like more sugar, but this should be sufficient)

Preheat Oven to 375 degrees F.
1.  Mash the banana together with the Margarine and Sugar
2.  Add Vanilla
3.  Add the Oats to the wet mixture, set aside
4.  Mix together remaining dry ingredients, Flour, Baking Soda, Baking Powder
5.  Add dry ingredients to the wet until incorporated (mixture may look a little wet.. DON'T ADD MORE FLOUR!)
6.  Drop spoonfuls onto ungreased cookie sheet and bake until lightly browned - about 7-10 min.
7.  Cool on cookie rack, then enjoy!

These cookies stay soft long after they've been baked.  If you like them with a little more crunch, leave them in the oven to brown just a little longer.  They do not burn too easily.

The oven i use is an old gas oven, and it's hard to keep the temp. steady without a pizza stone.  So the cookies are fairly easy to bake.

Feel free to add any extras, raisins, nuts and other.

I've been looking for a soft biscuit recipe for ages! Grin My British cookbooks only have recipes for hard, crunchy biscuits. Tongue

SO happy you had a chance to try it out!  You can add just about anything to the cookie and it comes out great! 

I was tired of finding recipes that left my cookies hard the next day.  Adding a banana really helps ^_^.

If anyone else has any variations, feel free to post them here.  We can try them all out  Cheesy

i started making these a couple weeks ago... and now i'm obsessed with creating variations......

today i stuck to the basic recipe, but added 1/2 cup more oats to the wet mixture, 2 1/2 Tbs. of water (to compinsate for extra dry ingr.).... 2 tsp. of cinnamon, and 1 cup of raisins soaked in o.j. for a minute......... and voila.... oatmeal raisin cloud cookies. yum yum,

Is there anything you can add to this recipe to take the place of the banana?  I HATE bananas but would love to try this out.  I know a lot of low-fat recipes call for applesauce in place of oil to keep things moist.  Would that work in this recipe?

I've got the last panful in the oven as we speak, and may I say, these cookies are the best vegan yummies I've ever had! I have baked some incredibly sticky, rock hard, flat and/or dry cookies since I embarked on the eggless vegetarian road, and these take the metaphorical cake.
My batter didn't turn out wet at all, I was a little worried! But they baked up beautifully and are delicious and fluffy and mmmmmmm good. You can definitely taste the banana and it's so good with the chocolate chips!

applesauce i'm assuming would work really well, at least worth a try.  they are probably both moisturizers for the general batter although you might have to experiment with the dry ingredients to get them to turn out the way you want.  its sounds like this recipe is a pretty good one for changers though, id say go for it banana hater
