Do they freeze well?  Or should I stick to the fridge?

The biggest problem I have had with these is that they can get a bit soggy if left too long so I don't suggest freezing.
 

Mine actually froze really well.  The difference may be in a couple of things: I added small chunks of cream cheese and some sauted mushrooms, put them into silicone muffin cups, and baked them a bit hotter/more than the original recipe. Perhaps the added solids and bake time helped.  Or may be it's some cosmic power of freezing them in the cups........?

Well, in FL moisture is always a problem, so it's pretty much a constant battle with anything I want to cook and save.

Okay, I made these two days ago and they are amazing! I added in chopped onion, thinly sliced zucchini and some milk. I made them in the smaller muffin tin and I have been eating them on a piece of whole wheat toast. Mmmmm.

yay! this is a muffin-ier version of my usual breakfast! i'm a big fan of these additions:

  • caremlized onions, zuchinni, fontinella cheese
  • spinach, garlic, fire roasted salsa verde(on top after cooking)
  • onions, spinach, mushroom (a staple breakfast at my mom's)
  • lists with bullets, yay!

i'm curious to try these in muffin form, and perhaps adding some veggie sausage. and the south beach diet is awesome. just sayin
