Lastnight my boyfriend and I hosted a vegan mexican food potluck. we recently moved in together and this was our chance to sort of show off our new place.

Rocky made green chili and fajitas (ports, onions, zucchini, carrots, and red and green bell peppers) and I made fideo, which is browned vermicelli noodles cooked in tomato sauce water and spices. Heraldo brought guacamole, and spiced TVP. Ben and his girlfriend brought black beans and a chili sauce, and Lyle brought a raw soup made from home pressed almond milk, and cucumbers, as well as apple avocado spring rolls.

can I ask what is in the white bowl in the middle of the table..could it be the TVP??

Those are actually blue corn tortilla chips.

The recipe for fideo goes like this:

2 packages of vermicelli noodles
1 small can tomato sauce
2-3 cups water
1-2 tbs chili powder
cayenne pepper
2-3 tbs cooking oil (i use grape seed, its got a low-key flavor)

Brown noodles in oil over medium-high heat. (I like to compare it to strawberry blonde hair with brown lowlights, I work in a salon, whatevs.) This takes about 5-7 minutes, maybe a little more. Add the water to the pan, carefully this produces a lot of steam. Then at the can of tomato sauce to the mix. Let it simmer down a little and then lower the heat to medium, medium-low. Put in about a tbs of chili powder, more if you like it spicy. Throw in the rest of the spices to taste. Let the noodles simmer and absorb the water, stirring occasionally. When the water is cooked down, taste the noodles, if they are under cooked, just add more water. It is ready to eat! I like this particularly with slow cooked pinto beans and chili! Yum!!

fun! and the menu sounds great

i love personal swaps. i'm looking to swap my art or paper crafts for some re-usable fabric snack bags, fabric sandwich wraps, fabric paper towels, glass pendants, ephemera, or art books.
