I just saw a paint-your-own seder plate kit at Bed, Bath, and Beyond (I think). Too cute!! You could probably make your own with a big clear glass plate and acrylic paint. And you can get pretty crafty photocopying and binding your own haggadah.

Plus, my dad's vegetarian so we couldn't do a lamb shank, so we always had fun creating false lamb shanks out of construction paper.

How about painting or decoupaging a dish for Matzos? There's an endless variety of styles you can choose from..
same for painting/embroidering or even knitting an afikoman cover..

Over at Knock Knock (http://www.knockknock.biz) they have awesome matzah-photo-print wrapping paper that could be used as a jumping-off point.  Personally, I've always wanted to find/make a fabric version of the paper so I could stitch it up into a bag.

I once read a suggestion that every guest comes with a pillow (like a sofa pillow) and then leave with one another guest brought.  So a Pesach Pillow Swap. 

I am meeting with the two women I'll be having seder with (one is also married to a non-Jew too and the other is single) and I think I might suggest it.
