I was clearing out my baking cupboard today, so of course I had to bake something to reward all that hard work!

I only had random supplies left, so I made up these Vanilla Cocoa Caramel Cookies with 2 cups wholemeal spelt flour, a tablespoon of baking powder, 1 cup demerara sugar, a half cup of sunflower oil and a quarter cup of water, as well as three caps of vanilla essence and some cocoa nibs - baked at 180C for 10 minutes.

Whilst they were baking, I made vanilla caramel (sugar, water and vanilla essence) to drizzle over the top of the cookies.

Yum yum!
