Every time I try to frost cupcakes, the icing comes out very sloppy, even though I try, Darwin love me. Anyone out there know how to make it more professional?

Sounds like to me, the icing/frosting is too runny. Look for a good buttercream recipe online. That is the icing/frosting that is sweet, and doesn't need refrigeration. pssst, I work in a bakery, and that's what the cake decorators' use.  Tongue

a trick my aunt taught for applying frosting with a butter knife
1. make sure the cupcake or cake has cooled completely.
2. dip the knife in hot water then get frosting apply
wipe and repeat

You could always try piping? Its hard to go wrong with a swirl of piped buttercream after a bit of practice, cos the fancy nozzle makes it look neat - I always get in such a mess trying to spread icing with a knife

Thanks for the tip :-) I think I'll try this the next time I make cupcakes - I usually fail to wait until the cake is properly cold, which is probably my problem!

I've popped cupcakes and the frosting into the freezer for 5 min right before I frost them, helps it not run all over the place.
