Hello!

Here is my *new* favorite pasta salad...



Its super easy & very moreish! Chop some butternut squash, red onion and green peppers in to chunks, drizzle with oil and roast until soft.  Meanwhile cook some pasta on the hob (i think a wholewheat penne tastes good here).  Chop some sun dried tomatoes and put in a large bowl (i used ones that come in a jar in oil, transfer a bit of the oil too).  Once the pasta is cooked, cool it under cold water and add to the tomatoes & stir. Once the veggies are soft add them too, stir & season with loads of black pepper.  Then sit back, pour a glass of wine & scoff  Grin

You can add pine nuts / basil / cheese for a bit of variation!

Hello, yes black pepper was the only added extra & lots of it!  I'm sure some basil (or your fave herb) would make it taste even better.
