(Better than a )Hostess Cupcake! [With Recipe]

Hey guys!

I got a craving for cupcakes the other day and decided to go all out, and use my moms recipe for filled cupcakes!







Here is the Recipe


For Batter

2 Cups Sugar
2 Cups Flour
2-3 Medium Eggs
2 tsp. Baking Soda
1 tsp. Vanilla extract
1 Cup Mayonnaise
6 TBS Cocoa Powder 
Pinch of salt
1 Cup Cold Water

-Mix all ingredients; beat 2 minutes at medium speed.
-Bake at 350 F for about 20 minutes ( Makes 24-36 Cupcakes)

For Filling

1 Cup Milk
4 TBS flour
2 tsp Vanilla extract
1 Cup Vegetable shortening
1 Cup Granulated Sugar 

-Combine milk and flour, cook over low flame until thick and smooth.
-Add vanilla and let cool completely.
-In an electric mixer cream  sugar and shortening. Beat until no sugar crystals remain (usually 10 minutes).
-Add milk and flour mixture, beat an additional 10 minutes.
-Using a number 7 or 8 decorating tip, insert filling into top of cooled cupcakes, until they puff up in size.
- Frost & enjoy!

** For "Hostess" cupcakes

Melt chocolate frosting into bowl, dip tops into the frosting to cover them with a nice thick glaze. Once the frosting has set, take white frosting and fill a sandwich bag and make small swirls on top. I recommend practicing a bit on a plate or some wax paper before starting the first cupcake.

Wow, those look so good. But then I noticed they have mayonnaise in them.    I wonder if I could leave that out? Substitute it? Hmmmm...  Great job though!

As for the mayo - and you'll want to google the actual swap - but mayo is usually used for oil/eggs in a recipe.  So you could probably add an egg or two and some oil (again google for what is equivalent to a cup of mayo - I'm not sure )

I know it sounds gross, my brother kind of freaked out when he saw me putting the mayo in haha. He was like "There is Mayonnaise in cupcakes!?" 

The mayo makes them moist & it it really undetectable when you are eating them. The base of the cupcake is not really the average batter, which makes them great when combined with the filling, as they are not too rich and sweet.
 
If you really can't stomach the idea of the mayo though I think a  regular cake mix would work just fine!
Oh and if you find a sub. that works well I'd love to hear about it!

I am in the process of making these now...but I am having trouble with the filling. I have been beating the shortening and sugar for 10 minutes with my KitchenAid but the sugar is not dissolving! There are still crystals...is that ok?

Okay, so I finished them...they turned out well! I used a devil's food cake scratch recipe I found on the internet, and the filling recipe from this page. The frosting was Betty Crocker and Duncan Hines...I didn't think I could get buttercream to look that flawless.
My friends loved them!
