It's pretty embarrassing posting on here when there are always such nice desserts and such posted, but I figure there might be a contingent of Craftsters out there who are drooling over the cupcakes but abstaining due to a diet/other dietary restrictions. I wanted to make cupcakes for DBF and his roommate over Christmas and I wanted to make these cupcakes:

But, I didn't want to have such cool and delicious looking temptations in DBF's apartment when I'm trying to lose these last 10 lbs (those first 65 were hard enough to lose!). So I set out to do the impossible.. delicious, awesome looking cupcakes. And yes, it was impossible, they aren't great looking, but the boys got what they were right away, And they didn't even notice that they were "light".

I made them with a box of devil's food mix, but replaced all the eggs, oil and water with a can of diet pepsi. The icing is 99% fat free cool whip mixed with dry sugar free vanilla pudding mix and red food coloring. The white spots are just a marshmallow cut into 4ths. For those of you following Weight Watchers, all of this sugary deliciousness adds up to a measly 3 points per cupcake. (Cupcake = 2, Icing + Marshmallows = 1). They didn't last too long, but you might need to keep them refrigerated in order to keep the icing intact. Also, I didn't have one this time, but usually when I make diet soda cupcakes I add an egg white to the mix too, it helps with the consistency.

Basically, I'm ashamed of how they look, but I thought someone with a little more talent could at least take the basic ideas and make something better, so I submit for my humiliation and your improvement:

I'm impressed!! 3 points?! That's pretty good. I had no idea you could make cupcakes with Diet Pepsi!
Also, congrats on the weight loss! That must have been tough (I'm aiming for 30 lbs. right now)!

Yup I've made a few batches of cupcakes and cakes using diet pop instead of the oil, eggs, and water with a cake mix. I've also tried white cake with diet lemonade soda, and next I want to do carrot cake with diet gingerale. It makes it really moist and they turn out great, especially when I add the one egg white. I got the idea from a diet website a while ago and I've been having fun experimenting.

Yay! I'm glad that they're still recognizable. I loved the ones in the original post so much and I had been wanting to make them for a really long time. I couldn't find the white chocolate discs and the marshmallow idea just kind of hit me, they aren't as neat (hard to cut!) but I'm glad they worked Smiley

i don't think they're ugly and i'm so going to try this
i lost over a stone in the autumn and i'm doing well keeping it off but something like that would be great because there's next to no guilt involved
i should pass the idea on to my cousin as she's dieting now and has serious snack problems

I think these look so tasty. I had to look away when I clicked the thumbnail. I hadn't eaten at the time and thought it would only encourage me. The whole recipe sounds interesting. I will have to try this since I'm a huge sucker for sweets and also trying to shed a cpl extra lbs. Thanks for your recipe.

Your cupcakes look tasty.  Don't think they're ugly...they're very cute. 

Have you ever tried lemon cake mix and Squirt (a citrusy grapefruit - or something- soda)?  SO good!  That one doesn't even need icing.  I did find that I only needed about 10 oz of the soda, not the whole can.

I haven't tried that but it sounds delicious! I've also heard good things about Diet Mountain Dew and lemon cake. We don't have Diet Mountain Dew in Canada (just full sugar) but I brought back 4 cases from my most recent trip and am going to try it soon. I'll add your suggestion to the list as well Smiley
