Thanks! They are yummy!  I was a veg for 7 years but now I am a hardcore omnivore.

Here is the recipe for the cupcakes, modified from the greatest cup cake book "Crazy About Cupcake"

3/4 cup room temp, unsalted butter
1/2 cup granulated sugar
1/2 cup maple syrup
1 tsp. vanilla
3 large eggs
2 cups flour
2 1/2 tsp. baking powder
1 tsp. salt
1/4 cup milk (I was out of regular milk so I used evaporated milk)
1/2 cup chopped walnuts
bacon I sliced and crisped about 6 slices but one could use more or less, next time I will do more

preheat oven to  350

cream butter an sugar with an electric mixer  3-5 minutes, till fluffy
beat in maple syrup
add vanilla and eggs until the mixture is smooth
in a seperate bowl sift flour, baking power, and salt
alternating with the milk, add the flour mixture, beat well
stir in walnuts and bacon
fill cup cake 3/4 full bake  for 20ish minutes or until a toothpick comes out clean

This made 15 normal cupcakes plus one large cupcake

Yum yum!  Enjoy!
