Might be a daft question, but if I were to put water in those tiny vials would it go off? Or food colouring? Just wondered if it would go off is all? Oh and if it does whats the best stuff to put in then?

By going "off" do you mean rotting or otherwise being adversely affected by bacteria?

If so, ordinary tap water should be fine (it's been chlorinated) though some of the minerals could eventually settle out over a long time.  Distilled water is often used though, or sometimes tap or distilled water with glycerin or swimming pool "conditioner," to help keep things that may be put into the water from rotting, etc. (If nothing is put into the water though you'll seldom have a problem from bacteria, though some non-permanent colorants may bleed.)

You might want to say more about exactly what you'd like to do though so you can get a better answer, and definitely say if that's not what you meant by going "off."
