Apples in Wine & Cinnamon Sauce

I just love desserts with apples in them. This is a nice alternative to a traditional apple pie.

1/4 lb. (1 stick) margarine or butter      1 tsp ground cinnamon
1 cup dry white wine                          1 cup sugar
4 cups sliced apples                            2 tbsp lemon juice
                                                       1-1/2 tsp vanilla extract

Over medium heat in a heavy saucepan, melt the margarine or butter, then add the wine and stir in the apples.  Sprinkle the cinnamon and sugar over the apple mixture and stir.  Continue cooking for about 10 minutes, then stir in the lemon juice and vanilla.  Lower the heat to a simmer & cover; continue cooking for 2 hours, stirring occassionally until the apples break up.  Yields about 3 cups.

Serve warm or cold over ice cream, biscuits, or any not-too-sweet cake
