i just had to try it before i even left a comment! it's cooling in the fridge now, but i may have done something wrong; the toffee that ended up under the crackers while in the oven is pretty dark. I'm concerned. :.(

Yes, it does have to be butter to make toffee.  Margarine will NOT do it.  Too much water, not enough fat content

I always use real butter - can usually find a a good price this time of year, and hate to skimp too much if it's a gift (can always buy generic brown sugar, choc chips, etc).  I usually sprinkle the chocolate chips over the top right after I get them out of the oven (and shift back into place, of course).

I LOVE to use tiny leftover pieces in oatmeal cookies.

Leftovers?!?  There's no such thing in our house.  I have to be careful not to make this too often because it is seriously addictive!!  Our version is called Fool's Toffee - as in it's toffee, but it fools you because you'd never know there's saltines in it!

I've seen a similar recipe, but with matzo instead of the saltines.  I like yours better.  It seems to have less sugar/butter but still make lots of toffee...I will definitely put this on my list for next year; thanks so much for sharing the recipe!
